Garlic Mushroom Pasta

Method

  1. Boil a pot of salted water and cook pasta al dente according to package directions
  2. Prep ingredients
  3. Add oil and 1 tablespoon of butter to a skillet over medium-high heat.  Once the pan is hot, add the onions and mushrroms.  Saute, stirring occasionally, until the water has been released from the mushrooms and cooked off and everything gets a good sear and is browned/caramelised.  This will take roughly 8 – 10 minutes
  4. Stir in the rest of the butter, plus garlic and Dijon mustard.  Cook for about a minute
  5. Add broth, lemon juice and zest, and let it bubble for about a minute
  6. Take the pan off heat and stir in the parmesan cheese and parsley.  Add a splash of the hot pasta water prior to draining the pasta (2 tablespoons) and then toss the pasta with the sauce.
  7. Season with salt and pepper to taste and serve immediately
