- Preheat oven to 150°C and line a roasting pan with baking paper
- Drizzle salmon on both sides with extra virgin oil, rub tomatoes in extra virgin oil, and place on baking paper and season. Bake salmon and tomatoes for 20-25 minutes until cooked to your liking. (Fennel seeds add a nice flavour to the salmon if preferred).
- In the meantime, boil potatoes, cut into 5cm thick slices and set aside, unless wanted hot.
- Boil eggs until firm, refresh under cool water, peel then slice lengthwise and set aside.
- Blanch trimmed beans then cool in iced water.
- When salmon is ready, place on large serving platter, scatter olives, eggs, potatoes and beans around, pour over the sauce and top with parsley and capers.
