American Style Pork Ribs

  2. Season the ribs well with a drizzle of extra virgin olive oil, sea salt, black pepper and granulated garlic and refrigerate for a good few hours. Remove from fridge about 30 minutes before cooking.
  3. Add the oil to a large saucepan and heat to medium. Add the garlic, cumin and chili powder and stir constantly for about a minute. Whisk in the remaining sauce ingredients and slowly bring to a boil. Cover and allow to simmer gently, for about 30 minutes. Remove from heat. During the simmer, start on the ribs.
  4. On a pre-heated high grill, place ribs meat side down and sear for about 3 minutes. Turnover and cook a further 3 minutes. You are not looking to cook them, but simply to caramelize the outside. Remove ribs and place them in a large baking dish and cover with foil to rest.
  5. Remove the foil from the ribs and pour the sauce over them. Use the same foil to cover the baking tray and set your BBQ so that the baking tray can sit ‘level’ on the grates in the middle of the BBQ.
  6. You do not want direct heat for this method so only have the outside burners on very low. Cook with the hood down for about an hour to 2 and 1/2 hours or so. Check them now and then, to ensure the sauce is not cooking ‘off’ too much. It will start to thicken, but that is fine.
  7. Remove foil for the last 30 mins to thicken sauce.
  8. Rest them for 20 minutes before serving with hot chips and loads of napkins.
