Method
- Mix buckwheat well with raw egg in a bowl (if using egg).
- Add to dry hot frypan – cook stirring frequently until egg is absorbed and kernels are looking dry and separate. If not using egg, miss these first two steps.
- Completely cover with water or stock, stir well, cover with lid, then stir occasionally until liquid is absorbed. Kernels should be soft, but not soggy and pan should be dry.
- In the meantime, chop your vegetables – as many and as chunky or fine as you prefer.
- Once liquid is absorbed, add all vegetables and cook through.
- Serve with cheese stirred through to melt. Eat immediately.
