- Combine flour and spices in a large bowl, mix well.
- Combine butter, honey and sugar in a saucepan, stirring over a low-medium heat until dissolved. Cool slightly, mix in eggs.
- In a small bowl stir together bicarb and vinegar, ensuring no lumps. Stir into honey mixture.
- Add the honey mixture to the flour and stir/combine to form a dough. Shape into a disk, cover in cling wrap and let rest in the fridge for at least an hour (I leave mine overnight).
- Preheat oven to 180°C. On a floured surface, roll out sections of the dough to about 0.5cm thickness, cut out whatever shapes you like with a biscuit cutter and place on a lined tray.
- Bake for 5-7 min and top with a sliced cherry or almond (traditional in my family but you can do whatever you’d like).
- Store in an airtight container for up to a month.
