Indian Fried Beef Kerala

Method

  1. Fill a deep, heavy-based saucepan 1/3rd full with oil and heat to 180°C/350°F. Deep fry the potato cubes until golden brown. Drain on paper towels.
  2. Put the steak in a bowl, add garlic, pepper and the ginger juice and toss well. Heat the oil and fry the beef quickly in batches over high heat. Keep each batch warm as you cook the remainder of the beef.
  3. Reduce the pan heat, fry the onion rings until golden and remove. Add the stock, tomato paste, soy sauce, chilli powder and lemon juice to the pan and cook over medium heat until reduced. Add the fried onion, cook for 3 minutes then add the chopped tomato and peas, stir well and cook for a further 1 minute. Add the beef and potato and toss well until heated through.
  4. Serve, garnished with chopped coriander.
