Warm Salmon Nicoise

Method

  1. Preheat oven to 150°C and line a roasting pan with baking paper
  2. Drizzle salmon on both sides with extra virgin oil, rub tomatoes in extra virgin oil, and place on baking paper and season. Bake salmon and tomatoes for 20-25 minutes until cooked to your liking. (Fennel seeds add a nice flavour to the salmon if preferred).
  3. In the meantime, boil potatoes, cut into 5cm thick slices and set aside, unless wanted hot.
  4. Boil eggs until firm, refresh under cool water, peel then slice lengthwise and set aside.
  5. Blanch trimmed beans then cool in iced water.
  6. When salmon is ready, place on large serving platter, scatter olives, eggs, potatoes and beans around, pour over the sauce and top with parsley and capers.
